ZUCCHINI QUINOA CAKES

1 large zucchini grated

1 cup cooked quinoa 

1/2 cup cooked chickpeas 

1 small onion or 2 shallots

3 garlic cloves

1 egg

salt, pepper

any spices you like paprika, cumin , oregano etc...

1 tsp lime juice

mint

cilantro 

yogurt

 

  • preheat oven to 190'C
  • cook quinoa according tot he packaging then set aside and let it cool down
  • grate zucchini on the large holes of the box grater, sprinkle with salt and let it sit for at least 10 min, then try to squeeze out as much water out as possible
  • place chickpeas in the large  bowl and mashed them using fork
  • add diced onion, garlic, salt, pepper, spices, 1 tsp of lime juice, quinoa, grated zucchini, 1 egg, chopped mint and cilantro and mix well
  • form the mixture into patties
  • bake on the baking sheet with parchment for about 20 min then flip and bake for 10 min more until slightly golden
  • to make minty sauce to go with it, in the mixer combine greek yogurt, fresh mint, few stalks of fresh cilantro, salt and pepper
