2 large carrots

1-2 turnips

1 medium size potato

1-2 cups butternut squash

1 can chickpeas 

1 large onion

2-3 cloves of garlic

2 tbsp olive oil

1/2 tsp ground coriander

1/2 tsp ground cumin

1/2 tsp caraway seeds

1 tbsp harissa

1 tbsp tomato paste

fresh chopped parsley

1 tsp honey

salt, pepper


  • heat oil in the large pot, add onion and salute until soft, add chopped garlic, ground coriander, cumin, caraway and sauté for another minute
  • then add vegetable stock then all the other ingredients: chopped carrots, turnips, squash and chickpeas 
  • stir in parlesey and honey, add harissa, tomato paste and season with salt and pepper
  • bring to boil, then lower the heat and simmer for about 20-30 min
  • serve over couscous or quinoa
