1 cup peeled and cubed squash

2 small shallots 

2 garlic cloves 

2 tsp fresh ginger, finely chopped or grated

2 tsp miso 

handful of greens (spinach, chard..)

1 scallion 

sesame seeds


  • heat a bit of coconut oil in a small pot  and sauté onions for a few minutes add garlic and then squash and ginger and sauté for another 7-8 min 
  • add water and bring to boil, then reduce the heat and let is simmer until cooked through about 10 mins
  • remove couple of tbsp of the squash broth, add miso, stir to dissolve and pour back in to the pot
  • add greens, stir until just wilted, remove from the heat and place in the bowl 
  • top with scallions and sesame seeds and serve
