200g plain greek yogurt

1 egg

extra virgin olive oil

1 tbsp lemon juice

lemon zest

pomegranate seeds

salt and pepper

chilli flakes

fresh mint

micro arugula

grape tomatoes


  • Mix yogurt with lemon juice and put on the plate, drizzle with olive oil, sprinkle with sea salt, pepper, chilli flakes and top with egg, tomatoes, pomegranate seeds, mint and micro arugula, finish up with little bit of lemon zest
  •  I also added little pieces of whole wheat bread to have something to dip in:-) but you can stick to veggies only and add avocado, cucumbers or pretty much anything you like
