400g salmon into sushi grade salmon

1/2 mango thinly sliced

1 avocado thinly sliced

1/4 cucumber thinly sliced 

sushi rice

1 spring onion (half for garnish half for marinade)

1/2 cup soy sauce

2 tbsp sugar

1/4 cup sesame oil

1 tsp ground ginger

toasted sesame seeds 

wasabi sesame seeds (optional) 


  • in a medium bowl mix soy sauce, sugar, sesame oil, ground ginger and chopped spring onion
  • cut salmon into cubes then add it to the bowl with the marinade and place it  in the fridge to keep it cool for at least 30 mins or until ready to serve
  • slice thinly all the veggies (avocado, mango, cucumber)
  • prepare rice according to the packaging and let it cool a little
  • once everything is done place rice on the bottom of the bowl and top with all the ingredients 
  • sprinkle with sesame seeds and extra spring onion 
  • serve immediately
