RAW VEGAN CUPCAKES

1 cup pitted dates 

2 cups of shredded carrot

1 cup almond meal

1/2 cup shredded coconut

1/2 cup chopped almonds

2 tbsp flax seed meal

2 cups oats

pinch of salt

1 tsp cinnamon

coconut whipped cream: 1 can coconut milk

1 tbsp shredded coconut

 

  • in the food processor shred the carrots then add all other ingredients and pulse until smooth
  • the mixture will look crumbly but will come together once you will  start working with it
  • spoon out the mixture in the cupcake pan then using your fingers press well and make a hole in each cupcake
  • fill them up with coconut whipped cream and sprinkle with some coconut
