300g whole uncooked quinoa 

60 g chia seeds

60 ml olive oil

125 ml water

1 tsp baking soda

1/2 tsp salt

juice from 1/2 lemon

  • soak quinoa in lots of cold water overnight in the fridge
  • soak chai seeds in 1/2 cup water until u see gel like consistency ( you can do that overnight as well )
  • preheat oven to 160'C fan forced oven
  • drain the quinoa and rince well, make sure the water is completely drained
  • place the quinoa into a food processor, add chia gel, 125 ml water, olive oil, baking soda, lemon juice and salt and mix for about 3-4 min until the mix reaches batter like consistency 
  • place the batter in a loaf pan lined with baking paper ( sides and bottom)
  • bake for 1 1/2 hours to r until firm to touch but bounces back when pressed
  • remove from the oven and let in cool down before removing the bread out of the tin for about 30 min
  • then let it cool completely before serving
