QUICK KOREAN BIBIMBAP

1 carrot,

1 zucchini

2-4 eggs

250g fresh spinach leaves

1-2  spring onions 

250g ground beef

1/4 cup soy sauce

2 tbsp brown sugar

3 garlic cloves, minced

1 tsp fresh grated ginger

1 tbsp sesame oil

cooked rice 

Bibimbap sauce: 

 2tbsp gochujang

1 tbsp sesame oil 

1 tbsp sugar

1-2 tbsp water

1 tbsp roasted sesame seeds

1 tsp rice vinegar

1 tsp minced garlic

 

  • in a small bowl combine all the sauce ingredients and set aside
  • in another bowl combine sesame oil, soy sauce, sugar, garlic, ginger and pepper let it marinade at least 30 min then add to the hot pan and cook until meat is cooked trough
  • in the separate pan heat up 1 tsp sesame oil, add spinach, season with salt and pepper and cook until soft
  • place rice in the bowl, arrange raw veggies around, warm spinach, ground beef, bibimpad sauce and place fried eggs on top, sprinkle with spring onion

NOTE : there are many variations of bibimbap,  this is a quick version without the traditional cast iron pot and using some raw veggies, if u want your vegetables blanched, place them briefly in the boiling water and season with soy sauce, garlic and sesame oil. And if you gonna use cast iron pot make sure is super hot so your rice placed on the bottom becomes nicely crunchy
