COCONUT CHICKEN CURRY

3-4 skinless chicken breasts

1 onion

3-4 cloves of garlic

2 tsp fresh minced garlic

1 tbs turmeric

1/2 tsp ground cumin

1/2 tsp ground cardamon

3-4 tbsp curry powder

2 medium tomatoes (chopped)

1 small head of cauliflower (cut into florets)

1 can coconut milk

cilantro

juice of half lime

olive oil, salt, pepper

 

  • season chicken with salt and pepper, heat the oil in a large skillet, once hot add chicken and cook 3-4 min until the chicken begins to brown
  • transfer the chicken to a plate
  • add the onion to the skillet and cook 3 -4 min until translucent, add ginger, garlic, turmeric and curry powder and cook. stirring until the mixture become fragrant
  • add chopped tomatoes, coconut milk and chicken and let simmer
  • after 10 min add cauliflower florets, juice of lime and cook until chicken is tender about 15 min
  • adjust seasoning with salt and pepper, garnish with cilantro and serve
  • for vegetarian option substitute chicken with garbanzo beans (chickpeas) for great protein alternative
