1 head of cauliflower

1 cup plain greek yogurt

1 lime, zested and juiced

2 tbsp chile powder

1 tbsp cumin

1 tbsp garlic powder or 3 garlic cloves finely chopped

1 tbsp fresh parsley

1 tsp curry powder

1 tbsp turmeric

salt and black pepper to taste

1 tbsp grapeseed oil


  • preheat oven to 400'F or 200'C
  • remove any green leaves and the woody stem off the cauliflower  
  • in a bowl, combine yogurt, lime zest and juice, chile powder, cumin, garlic, curry, turmeric and parsley
  • dunk the cauliflower into the bowl and then with your hand or spatula cover the surface evenly with the marinade
  • place the cauliflower on a lightly greased baking sheet and roast until it turn lightly brown about 40-50 min
  • the marinade will create a crust on the surface of the cauliflower
  • once done, let it cool for 10 min before cutting into wedges and serve with green salad or as a side dish to any meal
