ROASTED CHICKEN WITH LEMON AND THYME 

1 whole organic chicken

1 large lemon

1 clove of garlic, chopped

2 handful fresh thyme, finely chopped

salt, pepper

2 tbs softened butter

 

  • preheat oven to 425'F / 220'C
  • wash chicken inside and out, path dry then using your fingers part the breast skin from the breast meat ( do not rip!)
  • peel the skin of lemon, chopped and keep the peeled lemon aside
  • mix together butter, lemon zest, garlic and thyme, season with sat and pepper and then push this mix under the skin of the chicken and massage extra all over the chicken
  • cut peeled lemon in half and push into the cavity
  • put chicken in the tray and roast for about 1h
