WHOLE WHEAT PLUM CRUMBLE TART

CRUST:

1 cup pastry flour

1/2 cup whole wheat flour

1/4 cup sugar ( i used even less) 

1/4 almond meal

1/2 tsp salt

6 tbsp butter

1 egg yolk

CRUMBLE:

1/2 cup oats

3 tbsp brown sugar

2 tbsp butter

4 tbsp flour

 

  • combine flour, sugar and salt in the bowl or a food processor  and add butter and mix until mixture resembles "peas" then add yolk and mix until it begins to form a dough
  • transfer the dough to the tart pan and spread evenly then freeze the shell for about 15 min while you assemble the rest of the tart
  • preheat oven to 375'F
  • place the tart in the oven and partly bake it until golden for 15-20 min, then let it cool down in a room temperature 
  • toss plums with 1tbsp of sugar, 1 tsp lemon zest and arrange on the bottom of the crust
  • for crumble combine oats, four and sugar, stir in butter and form a small clumps with your hands
  • sprinkle the crumble all over the plums and bake for about 40-45 min or until tipping is golden and plums begin to bubble 
  • let it cool and serve warm or at the room temperature
