2 handfuls of mixed tomatoes ( different shapes and colors)

1 small spring onion

2-4 tbsp olive oil

1 tbsp red wine vinegar

100g goat cheese, crumbled 

half a clove of garlic, grated

sea salt and pepper

fresh greens ( micro oregano, arugula or basil) 


  • slice and cut the tomatoes depending on the size in a bowl
  • cut the spring onion into tin slices and add to the bowl together with grated garlic
  • add olive oil, vinegar, salt and pepper and toss it
  • taste it and add more salt and pepper if needed then add crumbled goat cheese and fresh herbs before serving
