TAPIOCA PUDDING WITH MANGO AND PASSION FRUIT

1/3 cup small tapioca pearls

2 cups coconut milk

1 egg yolk

1 tbsp brown sugar

pinch of salt

vanilla extract (optional)

1 ripe mango

juice of 1 lime 

1 -2 passion fruits

toasted coconut flakes

lime zest

 

  • in a mediuml sauce pan soak tapioca in 2 cups of coconut milk for 30 mins
  • whisk in egg yolk, salt, sugar and bring the mixture to simmer, then reduce heat until its barely bubbling and cook until it thickens about 15 mins, stirring frequently 
  • remove from heat add vanilla extract if using
  • pour pudding into cups and chill for few hours or overnight 
  • to make the mags puree, place ago in the food processor add lime juice and blend until very smooth
  • serve pudding with mango puree and fresh passion fruit on top
  • you can also add toasted coconut flakes for crunchiness and few gratin of lemon zest
