SMOKED SALMON AND COURGETTE QUICHE

WHOLE WHEAT CRUST:

1 3/4 cups (200g) whole wheat flour

1 cup all purpose flour

salt

1/4 cup extra virgin olive oil

3/4 cup water

2 tsp red wine vinegar or lemon juice

FILLIG:

smoked salmon

2 medium sized courgettes

4 eggs

1/2 cup of milk

salt, pepper 

 

  • to make the crust combine flours and salt in the mixer then add olive oil until it is evenly distributed through he flour
  • add water and vinegar (or lemon juice) while the machine is still running 
  • the dough should come together in a ball 
  • divide in half and then wrap each piece in plastic and let rest for 1 hour
  • roll out the dough on the work surface dusted with flour so it doesn't stick until is is 2-3 mm thick
  • lay it over tin around 22 cm in diameter, press slightly then prick all over using fork
  • preheat oven to 190"C
  • for the filling crack the eggs into a bowl, add milk, salt and pepper and whisk together 
  • cut courgette into rounds and smoked salmon into small pieces 
  • place the courgette in the tin in the pattern according to your liking together with smoked salmon, pour the egg mixture over it  and place in the oven 
  • bake for about 40-45 min depends on your oven or until golden brown
