GRILLED CHICKEN WITH LEMON SNAP PEAS AND LIMA BEANS

2 chicken breasts

400g snap peas

200g frozen lima beans

1 shallot

2-3 radishes

2 tbsp olive oil

2 tbsp lemon juice

1 tsp dijon mustard 

1 tsp sugar

salt, pepper

 

  • rinse and dry the chicken breast then season with olive oil, red pepper flakes, garlic, salt and pepper
  • whisk shallot, olive oil, lemon juice, mustard, sugar, salt and pepper in a bowl
  • steam snap peas and lima beans until peas are tender crisp and lima beans are heated through 5-7 min
  • toss in vinaigrette and set aside
  • grill chicken breasts over moderately high heat for about 5 min then turn and cook 5 min more and until golden 
  • serve grilled chicken with prepared peas and lima beans salad
