CUCUMBER AND TOMATO SALAD WITH BABAGANOUSH

This salad is very simple but so refreshing and perfect for those lunches or dinners when you don't feel like eating too much and just want to have something small and delicious. All you need to make is babaganoush, that can be done few days ahead and store in the fridge ready to be taken out when you get hungry.

Cut 1 medium cucumber, tomatoes (you can use multiple varieties) mix in some babaganoush, sprinkle pomegranate seeds and sesame seeds on top and garnish with fresh cilantro or parsley! This salad will hit you with a beautiful taste of fresh vegetables and sweet and sour dose of pomegranate seeds.
