1 large cucumber

5 tbsp olive oil

3 tbsp rice vinegar

1 tsp sugar

1 large thumb-size piece of ginger

1/2 stick of lemon grass finely chopped

salt and pepper

1 tbsp soy sauce

mint and cilantro

sesame seeds


  • for the ginger dressing finely grate ginger and mix with olive oil, vinegar, sugar, lemon grass, soy sauce and season with salt and pepper (refrigerate for a few hours to let the ginger flavor really comes out)
  • thinly slice the cucumber lengthwise to get thin ribbons
  • place the ribbons on the plate, drizzle generously with the dressing and sprinkle with mint, cilantro and sesame seeds
