COLD SOBA NOODLE SALAD WITH TAHINI-GINGER DRESSING

2 bundles soba noodles

1 large cucumber

small bunch of radishes

1 bunch green onion (scallions)

1tbsp finely grated ginger

2 tbsp tahini

2 tbsp rice vinegar

2 tsp low sodium soy sauce or tamari

1 tsp sesame oil

handful of fresh cilantro

red pepper flakes

sesame seeds

  • cook noodles according to package, drain and rinse under cold water
  • cut cucumbers, radishes and green onions
  • in a small bowl, whisk together tahini, vinegar, ginger, soy/tamari sauce, sesame oil, cilantro, red pepper flakes, if too thick add little bit of water
  • toss soba noodles with the sauce, add cucumbers, radishes and scallions
  • sprinkle with sesame seeds and cilantro and serve immediately
