500g fresh peas ( or frozen)

1 onion

3 cloves of garlic

handful of fresh mint

1,5 cup coconut milk

1,5 cup vegetable broth

1tbsp coconut oil or olive oil

salt and pepper

extra mint for garnish


  • chop the onion and garlic, heat coconut oil or olive oil in the large pot, add chopped onions and cook and garlic for a few minutes until tender
  • dd broth, coconut milk, peas, mint, salt and pepper and slowly bring to boil
  • once it reaches the boiling point, turn of the heat and blend with mixer until smooth
  • adjust seasoning
  • serve in the bowls, drizzle with olive oil and garnish with fresh mint or micro greens
