4 chicken breasts

small bunch of cilantro 

1 fresh chilli

1 clove of garlic

3 spoons of peanut butter

soy sauce

3 cm piece of ginger

2 limes 

honey for drizzling 


  • place wooden skewers in the tray filled with water to soak
  • put cilantro, chilli garlic, peanut butter, soy sauce ginger,juice of 2 limes and splash of water and whiz to a spoonable paste
  • season to taste
  • cut the chicken breasts into even cubes and thread 5-6 pieces onto each skewer
  • pour half of the satay sauce in the tray, place chicken skewers in it and with your hand cover each of them in the sauce 
  • drizzle with olive oil and season with salt and pepper
  • place in the oven set on grill for about 10 min on each side and until golden
  • 3-4 min before the chicken is done drizzle skewers with a bit of honey and put back in the oven (watch it so it doesn't burn)
  • serve with cold noodle salad, place some wedges of lime and extra satay sauce on the side
