CHIA COCONUT PUDDING WITH MIX BERRY COULIS

1 can (400ml) coconut milk

5 tbsp chia seeds

COULIS:

1 cup raspberries

1 cup blueberries

1 cup strawberries (sliced)

1 or 2 tbsp agave syrup or honey

 

  • mix chia seeds with the coconut milk for about 1-2 min, pour into glasses or ramekins and refrigerate for about 2 hours or until completely set
  • to make the mix berry coulis, place all the fruits in a small saucepan, add agave sirup or honey and bring to boil ,then reduce the heat to low and cook for 5 min 
  • transfer the sauce to a blender and puree until smooth
  • strain through a fine sieve and press as much trough as possible, leaving the seeds behind
  • you can adjust the sweetness with lemon juice or additional agave sirup ( sauce can be refrigerated for up to 4 days)
  • once coulis is cooled down, top each coconut pudding with some fresh raspberries and prepared coulis and place back to the fridge until ready to serve
