1/2 head of cauliflower

spring onion

small carrot (cubed)

1/2  cup of peas

2 tbsp sesame oil

2 beaten eggs

3 tbsp low sodium soy sauce

1 tbsp oyster sauce

sriracha (optional)

1 chicken breast (optional)


  • using food processor shred cauliflower pulsing few times, it should resemble grains of rice
  • in the large skillet heat up 1 tbsp sesame oil ( add chicken if using and stir fry for a few minutes) then add carrots and cook for  2-3 minutes, then add peas, cauliflower rice and beaten eggs and stir fry quickly to cook cauliflower but not to overcook it 
  • turn down the heat to low until eggs are fully cooked
  • at the ned stir in soy sauce, oyster sauce and spring onion
  • garnish with fresh cilantro and little bit of Sriracha
