CARROT PATTIES TOPPED WITH HUMMUS AND SALAD

1 cup grated carrots

1 small onion finely chopped

2 tsp cumin seeds

1 tsp fennel seeds

2 tsp ground coriander

2 tbsp chopped fresh coriander

1 tsp baking powder

1 cup chickpea flour

1/4 cup semolina

salt, pepper

150 ml water

olive oil for frying

hummus

 

  • to make the patties, mix all the ingredients except olive oil and hummus, form tick batter
  • preheat oven to 425'F, with your hands form small patties and bake for about 25min (turning them half way trough) 
  • if using a pan, heat up little bit of olive oil, and cook patties until golden on both sides
  • to make the salad use whatever ingredients you like, i made simple salad of thinly sliced radishes with splash of lemon juice, olive oil, salt and pepper mix with micro arugula and micro cilantro
  • to assemble the dish top carrot pancake with hummus and salad and serve
