BEET SALAD WITH ORANGE AND GOAT CHEESE

2 beets peeled and halved

1 cara cara orange

1 small red onion

goat cheese

pine nuts 

arugula salad

1 lemon

olive oil

1 tbsp mustard

 salt and pepper to taste

 

  • roast or boil peeled and halved beets until tender, then allow to cool down
  • peel and cut out segments from the orange, cut thinly red onion
  • prepare vinaigrette mixing together lemon juice, olive oil, mustard, salt and pepper
  • toast the pine nust
  • place arugula salad in the plate, add beets, orange segments, goats cheese, red onion and pine nuts and drizzle with the vinaigrette
