4 ripe bananas 

3 eggs

2 tbsp honey

1/4 cup olive oil

1 tsp baking soda

1 tbsp lemon juice

2 cups almond meal

1/4 cup ground flaxseeds


  • preheat oven to 160'C
  • in the large bowl mash up 3 bananas using fork, then add eggs, honey, olive oil, baking soda and lemon juice
  • baking soda will react with lemon juice, then add almond meal and flaxseeds mix well
  • spoon batter in the tin, and cut the last banana in half and place on the top of the batter to decorate
  • bake for about 50 min (or until a tooth pick inserted in the middle comes out clean)
