BAKED CAULIFLOWER CROQUETTES

`half a head of cauliflower

1 egg

1 small onion diced

1 tbsp of parmesan cheese ( or any hard cheese of your choice) 

2 tbsp almond meal (or oats or bread crumbs)

1 tbsp water

salt and pepper 

any spices of your choice ( paprika, oregano, chilli, cumin, curry.etc)

 

  • preheat oven to 180'C
  • cut cauliflower into small florets, steam until soft then transfer to a blender and pulse few times until it resemble "rice" grains
  • in a large bowl whisk one egg with water add salt and pepper, cauliflower rice, onion , bread crumbs, parmesan cheese and spices of your liking
  • mix well then with your hands form little croquettes place them on the baking tray
  • bake for about 20 min then turn them around and bake for additional 15 min or until nicely crisps
  • serve with quick delicious sauce of greek yogurt and sriracha ( start with few drops of sriracha and taste, add more if you like more spicy)
