CASHEW CRUSTED BAKED CHICKEN 

2 chicken breasts

2 eggs

1 cup cashews

salt and pepper

lime zest

optional seasonings: cumin, garlic powder, cayenne pepper

 

  • preheat oven to 400"F
  • add cashews to the food processor and blend until it texture looks similar to panko crumbs, add to shadow dish and add salt and pepper and spices to your liking (for a tropical option add shredded coconut to the cashew mixture) 
  • whisk egg in another shallow dish and add some lime zest for an extra zing
  • then one chicken at the time, dip it in the egg and then transfer to the cashew mixture and coat well
  • place coated chicken on a foil-lined lightly greased baking sheet (easy clean up) 
  • bake for about 25 min until cashew coating is crisp
  • serve with side of salad or honey mango dipping sauce 

 

HONEY MANGO DIPPING SAUCE

place all these ingredients in the blender and process until smooth: 1 ripe mango, 2 tbsp cilantro, 1 tbsp honey, lemon juice of half of lemon and  sriracha (the amount depends on how spicy you want it)
