APRICOT CHIA BALLS

350-400g dried apricots

1/4 cup shredded coconut 

1/3 cup peanut butter

1/4 cup honey

1 tbsp raw cocoa powder

1/4 cup sesame seeds

3/4 cup pepitas

1/4 chia seeds

1 cup rolled oats

 

  • soak half the apricots in the hot water for about 15 min
  • finely chopped remaining apricots
  • after you soaked your apricots, place them in the food processor with peanut butter, honey, cocoa powder and coconut
  • blend until thick paste is formed
  • then place in the bowl with sesame seeds, chia seeds, pipits, rolled oats and chopped apricots
  • mix to combine
  • with lightly wet hands roll about a heap of tablespoon of the mixture into a ball and place on the tray lined with baking paper
  • refrigerate for an hour or until firm 
  • store in the airtight container in the fridge for up to a month
